Grilled Cotechino Modena PGI Skewers

Method:

Cook the Cotechino Modena PGI in boiling water.

Whilst the Cotechino Modena PGI is cooking, cut the courgettes into thin slices, then season them with salt, a drizzle of oil and a pinch of thyme.

Boil the peppers for a few minutes and cut them into 2 cm-wide strips.

Chop the Cotechino Modena PGI and alternately thread the meat chunks and vegetables onto the skewers.

Grill everything until the vegetables are well-cooked.

• 1 red and 1 yellow pepper
• Oil
